PANEER COTTAGE CHEESE

Paneer is a fresh cheese common in india.It is an an unaged non melting soft cheese made by curdling milk with fruit or vegetable derived acid such as lemon juice. paneer is also called as cottage cheese or chenna. After making paneer, a greenish coloured whey is left which is very rich in nutrients. Instead of discarding the whey you can use it in various recipes
How to make paneer
 
Milk is boiled and then curdled by using an acidic agent like lemon juice,vinegar.Once the milk is curdled the whey is strained and coagulated milk solids are gathered in a muslin cloth. A heavy weight is kept on the curdled milk solids in the cheese cloth for 30 minutes.After 30 minutes, you get a nice block of home made paneer which is ready to use .

PANEER BUTTER MASALA RECIPE

Ingredients

Fresh paneer                       200gms
onion                                    2[medium size]
tomatoes                              4 ripe ones
ginger garlic
paste                                    2 tsp
chilli powder                        1 to 2 tsp
coriander powder                  2 to 3 tsp
cashew                                   6 to 7
coconut                                   3 tsp
kasuri methi                           little crushed
garam masala                        1 tsp
oil                                           3 to 4 tsp
butter                                      100 gms
green chilli                               1 no                            
Method
Place a pan pour 2 tsp oil saute the onion till light brown, add coriander powder green chilli then the tomatoes, saute till the tomatoes get soft and smashed,allow to cool, add to a blender make a fine paste
Grind the coconut and cashew to gather to a fine paste keep aside.Dice the paneer .
Place a kaddai add butter and oil put onion paste saute for a few minutes, then ginger garlic paste, chilli powder,saute till oil releases from the masala put salt, pour litte water when it starts to boil add coconut cashew paste,boil till the gravy gets thick then put the paneer cubes,crushed kasuri methi and gram masala .paneer butter masala is ready to be served with chapati,fried rice,and roti.
